Very easy Breakfasteggenchiladas perfect for a Sunday morning with the family! You can prepare these enchiladas the night before, refrigerate overnight then bake in the morning. These are perfect for brunch or entertaining in the morning. ENJOY!

Don’t fold in the ends of the tortillas. Leaving them open is part of the miracle of these enchiladas. The egg makes its way inside of the tortillas and bakes in there!

Ingredients
• 2 cups (151 grams) diced cooked ham
• 1 bell pepper, diced
• 8 green onions, finely sliced
• 2 cups (227 grams or 8 ounces) shredded cheddar cheese

• 10 eight-inch flour tortillas
• 6 eggs
• 2 cups (473 ml) half-and-half
• 1 tablespoon all-purpose flour
• 1/2 teaspoon kosher salt

Method

Prepare Baking Dish
Lightly spray 13×9-inch (3-quart) glass baking dish with cooking spray. Roll Tortillas

Turn Frozen Tater Tots Into Homestyle Hash Browns with a Waffle Iron!

This bite sized tater tots are delicious and convenient way to satisfy a hungry family; cleanup a snap too. Who knew, for such a specific appliance, the waffle iron is surprisingly versatile.

Ingredients

1 bag frozen tater tots

salt to taste

(for ketchup serving, if desired)

Directions

  • Spray a hot waffle iron generously with nonstick cooking spray.
  • Place tater tots on top of the hot waffle iron. Press the waffle iron closed, using a bit of pressure as needed to slowly lower the lid over the tater tots. After 1 minute, open the waffle iron and add any tater tots to empty spots, as needed. Close the lid and cook until crispy and golden brown.
  • Remove from waffle iron. Salt lightly. Serve with ketchup, if desired.

Pumpkin Waffles are the perfect fall treat that will satisfy your fall spice cravings.

Ingredients
  • 2 cups of all-pupose flour
  • 3 tablespoons of firmly packed dark brown sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon or pumpkin pie spice
  • 1/2 teaspoon of kosher salt
  • 1 1/2 cups of milk
  • 1 cup of canned 100% pure pumpkin
  • 1 egg yolk plus 3 egg whites
  • 4 tablespoons of melted cooled butter
  • 2 tablespoons of apple cider vinegar

Instructions

  1. In the bowl of a stand mixer, whip 3 egg whites until stiff peaks form. Set aside.
  2. Combine dry ingredients in a large mixing bowl and whisk together.
  3. Combine milk, pumpkin, butter, egg yolk and vinegar in a small bowl and stir to combine.
  4. Add pumpkin mixture to dry ingredients and stir to combine.
  5. Gently fold in egg whites.
  6. Use batter immediately in waffle maker.

In a large bowl, whisk eggs, half-and-half, flour and salt. Pour over the tortillas. Cover then bake or refrigerate overnight to be baked in the morning. Bake Enchiladas

Heat oven to 350 degrees F (177 degrees C. Uncover baking dish then scatter the remaining cup of cheese over enchiladas. Cover baking dish with aluminum foil and bake for 35 minutes. Uncover, and then bake 10 to 15 minutes longer or until set and cheese melted.
