Red Wine Turkey Gravy

Posted on Updated on

Thanksgiving just wouldn’t be the same without a full and flavorsome gravy on the table. But, have you had it with red wine? It‘s not just for drinking, anymore!

Ingredients

  • Roast Turkey for the drippings
  • 24 ounces reduced sodium chicken broth
  • 8 ounces red wine (A little more if you want :o)
  • 1/3 cup all-purpose flour
  • 1 tablespoon fresh herbs such as oregano, thyme or rosemary
  • Kosher salt
  • Freshly ground black pepper

Directions

Remove the turkey from the roasting pan and set aside to rest. Leave the drippings from the turkey in the pan and place the roasting pan over medium heat. Add the broth and wine at the same time. Whisk to combine, scraping the bottom of the pan until all of the bits have come loose. Cook for another 2 to 3 minutes in order to reduce the mixture slightly. Transfer the liquid to a fat separator and let sit for 5 minutes to allow fat to separate. Return 2/3 to 3/4 cup of the fat to the roasting pan and place over medium-high heat. Discard any remaining fat. Add the flour and whisk to combine. Cook, whisking continuously, until the mixture starts to thicken and become smooth, approximately 2 to 3 minutes. Once this happens, gradually add the liquid back to the pan and whisk until smooth and you have reached your desired consistency, approximately 5 to 6 minutes. Remember, your gravy should be slightly thin in the pan as it will thicken once you serve it. Add the herbs and whisk to combine. Season with salt and pepper.

Spicy Pumpkin Hummus

Posted on Updated on

This tasty Spicy Pumpkin Hummus is sure to be a hit this fall, with the perfect hint of spice to give your taste buds a kick, but feel free to add more cayenne pepper if you want it even spicier; as with any hummus recipe, the ingredients can be adjusted until you get the flavor you like!

spicy pumpkin hummus

Makes about 2 ½ cups of hummus

Ingredients:

1 can chickpeas, rinsed and drained

3 garlic cloves, minced

3 tablespoons lemon juice

2 tablespoons water

3 tablespoons tahini

1/2 cup canned pure pumpkin (not pumpkin pie filling)

spicy pumpkin hummus

1 teaspoon cumin

3/4 teaspoon salt

1/4 teaspoon cayenne pepper or to taste

3 tablespoons olive oil

Directions:

Place chickpeas, garlic cloves, lemon juice, water, and tahini in a food processor and blend until smooth. Add pumpkin and seasonings and blend until well incorporated. With the motor running, drizzle in olive oil until blended.

Taste, and adjust any seasonings to your taste (I added a bit more lemon juice, salt, and cayenne).

Optional Crackers to Serve with the Hummus:

Flour tortillas

Cooking spray

Garam masala, cumin, salt

Preheat oven to 400°F. Cut desired amount of tortillas into chip-sized triangles. Lay in a single layer on a baking sheet lined with parchment or foil. Spray with cooking spray and sprinkle the tops with the seasonings. Bake until crispy, 6 to 8 minutes.
